Cake
- 2½ cups flour
- 2½ cups sugar
- 2 tsp baking soda
- ii tsp cinnamon
- ane tsp table salt
- 2 tsp vanilla
- iv eggs
- 1 cup vegetable or canola oil
- 3 (four-oz) jars carrot baby food (Gerber Stage two)
Frosting
- 1 (8-oz) package cream cheese room temperature
- 1 stick butter room temperature
- 2 tsp vanilla
- 4 cups powdered sugar
- chopped pecans for garinish

Preheat oven to 350ºF. Grease and flour three 8-inch round cake pans.
